Easy, healthy spaghetti squash

Boy oh boy…I have been so busy these past few weeks! I have been studying like a mad woman, working out in my little free time, and sleeping when I can. 😉 Even being busy, I’ve been doing my best with eating healthy and still packing my lunch for school everyday and making the majority of my meals at home.

Making quick, healthy meals is still possible even with a busy schedule! I have a quick and easy option for you when you’re crunched for time: spaghetti squash.

All you need is a spaghetti squash, microwave, and (if you want) sauce and other toppings. I found a cute little spaghetti squash – perfect for this party of one over here!

IMAG0940Wash your squash (hehe, that rhymes). Then cut it lengthwise down the middle. **You will want a big, sharp knife for this – these guys are tough to cut! Next, take a spoon and scoop out all the seeds and guts! The pic below shows one side scooped out so you can see the difference.

IMAG0941Once both sides are scooped out, place the halves facedown in a microwave safe dish and cover with microwave safe plastic wrap!

IMAG0943Now, just put these bad boys in the microwave for about 10-12 minutes or until you can pierce the outsides with a fork. Then you’ll take them out and let them cool for 5-10 minutes (don’t wanna burn yourself, do you??). While you’re waiting for them to cook/cool, you can heat up some sauce or cook up some meat or chop some tomatoes or even just get your bowl ready and some S&P.

Once it’s cool enough to handle, you’re just going to take a fork and scrape (lengthwise) down the squash so that all the “noodles” will come out. You’ll end up with something looking similar to this. 🙂IMAG0944

Scoop it into a bowl (or onto a plate…if you’re one of those people that like noodles on plates), add your toppings, and enjoy!! 🙂IMAG0945
