After yesterday’s evening of prepping, I thought, “why not do a post on prepping?” so…here we are.

Yesterday, I went to the store because I needed to get a couple random things to make it through the week (let’s be real, I’ll be back there before the end of the week) and when I got home, I took the time to get things ready and organized in order to make it easier for me when I’m tired or in a rush.

First thing I did was wash my new fruits and veggies – bell peppers, grapes, raspberries, and bluebs.IMAG0920Next, I took ALL the grapes off of the stems (see pic ^)…yes, this sounds like a pain but think how nice it would be to just reach into your fridge and grab some grapes and not have to deal with those disastrous stems – I don’t know about you guys but when I try to rush the process with grapes on stems, it usually results in grapes falling to the ground…so this should help cut back on that.

Cutting up your peppers and putting them in baggies is always the way to go. I have had peppers go bad because I took too long to cut them up…when you have the time, just cut them up. When they’re cut up and in baggies they are perfect for snacking and adding to salads and omelets.IMAG0924

Lastly, I threw some of those grapes into a baggy to put in the freezer for a refreshing snack. I also broke up a few bananas and put them in the freezer as well, because you can never go wrong with having frozen bananas on hand. 😉

You eat things when they are easy and convenient, so why not take the time to make your healthy foods easy and convenient?

P.F. Chang’s Rock ‘n Roll 1/2 Marathon

There’s no subtle way to put this…2015 is my year. As soon as 2015 hit, I knew it was time to start doing all the things I’ve always wanted to do. “There’s no time like the present.” 

I kicked off the year by running my very first 1/2 marathon! I made it my goal to run the 1/2 (without stopping) before I turned 21 and I did it on the 18th of this month (with 7 months to spare before the big 2-1!!!) woot woot!!

Next I read “It Starts with Food” (click to learn more) and was inspired to give the Whole 30 challenge the old “college try” – I will start this challenge on February 1…I know, I know, that’ll be a rough time to attempt to give up sugar with V-day right around the corner…but I am determined!!

The other thing I wanted to do in 2015 was to create my own blog…and BAM! Here we are 😉

Make 2015 YOUR year and do the things you’ve been putting off because you’re “too busy.” I promise you…being busy is something I can more than relate to, but they also say you make time for the things that are important to you…so let’s do it!
